Tuscany Pasta

What You'll Need

  • Olive oil
  • Chicken breast
  • Onion
  • Garlic
  • Pizza sauce or tomato paste
  • Cream
  • Parmesan
  • Pasta
  • Mixed vegetables (cherry tomato, spinach, zucchini, red capsicum, mushrooms—or whatever you've got)
  • 1 mug of pasta water
  • Pizza and pasta spice blend
  • Garlic & Herb seasoning
  • Tuscany Salt for finishing

How to Make It

Start by getting a large pot of water on the boil for your pasta. Cook it according to the packet directions—you want it tender but with a bit of bite.

While that's going, heat oil in another large pot (ideally one that'll fit your pasta later). Add your chicken breast, onion, and garlic, then season generously with your pizza and pasta spice blend and garlic & herb seasoning. Let it cook until the chicken's golden and the onion's softened.

Pour in your pizza sauce and stir through your vegetables. Add a good splash of cream and turn the heat down low. Let it all get to know each other for a few minutes.

When your pasta's ready, drain it and add it straight into the pot with the sauce. Pour in about a mug of that starchy pasta water—it'll help everything come together beautifully. Give it all a good stir.

Finish with a generous handful of parmesan and a sprinkle of Tuscany Salt. That's it. You've got yourself a proper crowd-pleaser.
