Birria beef is one of those magical dishes that transforms simple ingredients into something absolutely spectacular. Whether you're loading it onto crispy tortilla chips, tucking it into a warm taco, or rolling it up in a burrito, this rich and flavourful filling will have everyone coming back for more.
What You'll Need
- 1 carrot
- 1 onion
- 4 garlic cloves
- 1 tomato
- 1 red capsicum
- A swirl of olive oil
- Chuck or rump steak
- Mexican spice
- Garlic & Herb Seasoning
- Bay leaf (optional, but lovely if you have it)
- 3–4 cups of water
How to Make It
Start by roughly chopping your vegetables—carrot, onion, garlic, tomato, and capsicum. Don't worry about being too precise here; they're going to be blended into a beautiful sauce anyway.
Heat a good swirl of olive oil in a large pot and add your steak along with all those chopped veggies. Pour in the water, then sprinkle in your Mexican spice, Garlic & Herb Seasoning, and bay leaf if you're using one. Bring everything to a gentle simmer and let it do its thing on a low heat.
Once the vegetables have softened nicely, fish them out and blend them until smooth. Stir that velvety sauce back into the pot with the meat. Keep the heat low and patient—this is where the magic happens. Add more water as needed and let it cook until the beef is so tender it falls apart at the slightest touch.
Taste as you go and season to your liking. Cooking is as much about intuition as it is about measurements, so trust your palate and adjust until it's just right.
